Chocolate Breakfast Muffins with Mixed Berries

Once you’ve tried these chocolate breakfast muffins, I swear you’ll be baking up a second batch in no time at all. Plus, it’s the perfect excuse to buy a second box of NutriStart!

 

Prep Time: 15 minutes 
Cook Time: 20 minutes 
Servings: 12 muffins 

 

Ingredients

  • 1 cup all-purpose flour
  • 1 cup NutriStart Chocolate Smooth
  • ? cup cocoa powder
  • 2 tsp baking powder
  • ¼ tsp salt
  • ¾ cup white sugar
  • 1 cup milk
  • 1 egg
  • ¼ cup melted butter
  • 2 cup mixed berries

 

Instructions

  1. Prepare a 12-hole muffin tin with paper liners and preheat oven to 170°C
  2. Add flour, NutriStart Chocolate Smooth, cocoa powder, baking powder, salt and sugar to a large bowl. Whisk until all ingredients are well-mixed
  3. Make a well in the centre of the bowl, and add milk, egg and melted butter. Stir until the mixture begins to thicken and combine, but do not over-stir. Reserve a handful of mixed berries on the side, then add remaining berries to the mixture and stir
  4. Use a spoon or cup to fill the paper liners to just below the top, then sprinkle remaining berries on top. Bake for 20-25 minutes. To check, stick a toothpick into the centre and ensure it comes out clean

 

Recipe Notes

I used a mixture of strawberries and blueberries, but you can use whichever berries take your fancy. Raspberries, blackberries and cranberries would taste great!
