NutriStart Breakfast Peach and Blue Berry Cake

Delicious, light and fluffy peach blueberry yoghurt cake made with a NutriStart healthy crust.


Ingredients

  • 4 Peaches
  • ½ tsp Baking Powder
  • ¾ Cup  Brown Sugar
  • ½ tsp  Vanilla Extract
  • ½ tsp Baking Soda
  • 100g Butter
  • ¼ Cup Greek Yoghurt
  • 1 Cup NutriStart Original Smooth
     

Method

  • Preheat the oven to 180degrees C.  Line the bottom of a spring-form pan with wax paper, and grease with cooking spray.
  • Combine NutriStart, baking powder and baking soda together in a bowl.  In a separate bowl beat butter and brown sugar until light and fluffy.
  • Add vanilla, eggs and continue beating until creamy and light.  Fold in the dry ingredients and Greek yoghurt; mix until just combined transfer the batter into the spring-form pan.
  • Place sliced peaches evenly on top, reserving ten slices. Bake for 20 – 35 min at a 180dC. 
  • When the cake rises but still not brown carefully take it out of the oven and arrange the 10 peach slices on top.
  • Return to the oven and bake for a further 10 min.
  • When the cake is done let it cool still in the baking pan. Cake should cool for at least 40 min
